Jerk Chicken


A spicy dish that contains cuts of chicken that have been marinated for hours in a mixture of scallion, onions, thyme, pimento, cinnamon, nutmeg, peppers, and other seasonings. It is cooked over low heat, which allows the meat to cook slowly while retaining most of its natural juices and becoming saturated with the jerk flavor. Rice and peas will compliment the taste of this dish, along with plantains and coconut water.

Fricasseed Chicken


The chicken is marinated with a wild combination of herbs and spices, then fried to a golden brown. Additional peppers, vegetables, and spices are then added and cooked to create a rich gravy.
